
Mango Habanero Salad with Seared Scallops

Ingredients:
3 cups Mixed Herb Baby Greens
1 cup Diced Mango
½ cup Diced Avocado
½ cup Diced Tomatoes
½ cup Diced Red Onions
½ cup Diced Crispy Bacon
½ cup Sunkist® Spicy Mango Habanero Dressing
5 Scallops
2 Tbsp Butter
2 Tbsp Olive Oil
Instructions:
1. Toss all the ingredients except for the pan seared scallops in a bowl with Sunkist® Spicy Mango Habanero Dressing.
2. Sear the scallops with the butter and olive oil under high heat for 2 minutes per side, or until an internal temperature of 130°F is reached and the flesh is opaque and firm.
3. Mix well and place in a bowl or on a plate, top with hot buttered scallops and serve.
